I know you must be asking yourself, why is she writing about Celery? I've heard so many times from people that they think celery does not have much nutritional value. Contrary to what most of us think, it is packed full of nutritional goodies. Celery is an excellent source of Vitamin C and fiber. Just like we talked last week with the spinach, Vitamin C helps to support our immune system. Vitamin C also acts as an anti-inflammatory and promotes good cardio health. Celery is good for anti-aging again because of the antioxidant Vitamin C. Who couldn't use a little dose of anti-aging?
Celery contains at least 8 anti-cancer compounds. Celery helps to relieve constipation and acts a diuretic due to the potassium and sodium it contains. These components also make it great to juice and drink after a workout to help replace electrolytes. Celery is good to help our bodies detox. Celery can also be calming to the nervous system. Wow, can you believe this? Search Celery for yourself and see what you come up with. You'll be amazed. Not only are the stalks amazing but so are the celery root, the leaves, and even celery seeds.
We probably all have some celery stalks withering away in our vegetable bin right now. Wash them up and add them to your lunch along with your romaine lettuce and carrot sticks. Look how many veggies you are incorporating now! Celery is one of those precious veggies you need to buy organic.
Many of you know that I juice on a daily basis. I always add a couple of stalks of celery to my juice. We all know it adds a good taste to soups and the perfect crunch to a salad. Sauté some celery with some onions and garlic and add it to rice, orzo, pasta, whatever you want. Celery with peanut butter is always the great standby snack.
